The Slovenian-Italian border is a gentle, hilly landscape and a crucible for small-scale, low-intervention winemaking, which yields some of the world’s best natural and orange wines. It is also home to chef Ana Roš and her globally celebrated restaurant, Hiša Franko, where she elevates the food of the mountains, the valley, the streams and the meadow into plates that transcend but also remain faithful to her home’s terroir. Traverse both sides of the border across the Goriška Brda (or Colio) region, stopping for tastings at several agenda-setting private organic and biodynamic vineyards—including Edi Simčič, Dario Prinčič and Movia estates, sought by sommeliers—where the winemakers and their families serve up meals from local produce. Then join chef Ana Roš herself at Hiša Franko for traditional Slovenian cuisine at its most elevated, with an autumnal foraging outing and explorations of the region’s castles and small churches, while discovering one of the most exciting modern food and wine scenes in the world.

Start your day with forger Miha in the Soča Valley, near Hiša Franko. Before snow covers the Slovenian Alps, the valley’s trees and bushes provide walnuts, beechnuts, blackberries, argousier, elderberries, and rosehip. Autumn is also famous for mushrooms.

Farm Visit & Shepherd’s Lunch

Accompany Valter Kramar to a village called Čadrg for a traditional shepherd’s lunch at a local farm, under the magnificent Julian Alps’ Mt. Krn. Continue to an organic cheese farm to learn about traditional Tolmin cheese making from raw cow’s milk.
